Just made the best salad I've had in quite some time:
Grilled HEB Pork Fajita Meat
* Marinate in lemon (or lime) juice, teriyaki sauce, ground cumin, garlic powder, seasoning salt, chili powder ahead of time
Cucumber
* Peel (I hate the wax all over the skin that HEB cukes have), then cut in thick chunks, marinate in lemon juice w/ fresh ground sea salt & black pepper (pour extra lemon juice on salad greens just before serving)
"Spring Green" salad mix in a bag
Harriets Zesty Cilantro Dressing (from Costco - cream based, but a little goes a long way)
It was really simple, but amazingly good - even Gamble liked it. Next time I'd like to add some chopped avocado seasoned with lemon pepper, but my only avocado had gotten nasty so I tossed it. Some tomato chunks would be good, but I'm doing the low carb thing right now. Kelly would probably like some small chopped bell peppers, too. And fresh bacon bits or croutons would have been nice, but I'm trying to avoid both right now! I'm not afraid to admit the salads looked killer in our new cobalt Fiestaware bowls, either. I'm comfortable with liking my dishes.
BTW, at 247.5 again this morning, as I was yesterday. Not too bad considering I had several beers (Guiness...mmmm) last night for Ward's bday...and a 99 cent burger from Whataburger at about 2am (at least I gave the other one to Ward!). Doh! Gamble got me a Honey Chicken Butter Biscuit this morning that I couldn't resist, either, so I'm sure tomorrow I'll be 275. Oh well, at least I was good at lunch.
